What are some yummy meals (esp. supper) that require little "slicing and dicing?"
I can't take my wrist braces off for more than a few minutes each day. Chopping and cutting are very difficult for me with my carpal tunnel, and my stock of meals that don't require them is pretty slim. I'm starting to feel badly about my offerings to my family.
Any ideas about meals that are this kind of simple???

hmm, I will have to think on this a bit and get back with you. My first thought was the kids! Could they chop and dice? Or at least cut things in fourths to be run through the food processor? I made chicken salad this week and Mk did all the dicing. :)
Yep, they help a lot. Tonight they peeled sweet potatoes for me, for instance.
Sometimes I feel bad, though, because they've really had to take on a lot more responsibility in the last couple of weeks. Of course, getting to cut things is much more exciting than washing dishes or sweeping! They probably don't mind that part. :-)
I found one for you! And it is a crock pot one to boot!
Crock Pot Lasagna
Ingredients:
1 pound ground beef
1 chopped onion
2 teaspoons minced garlic
1 (28 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1 1/2 teaspoons salt
1 teaspoon dried oregano
1 (12 ounce) package lasagna noodles
1 (12 ounce) container Ricotta Or cottage cheese…we’re now using our own homemade cheese
1/2 cup grated Parmesan cheese
16 ounces shredded mozzarella cheese (again, Homemade)
Directions:
In a large skillet over medium heat cook the ground beef, onion, and garlic until brown. Add the tomato sauce, tomato paste, salt, and oregano and stir until well incorporated. Cook until heated through. In a large bowl mix together the Ricotta Or cottage cheese, grated Parmesan cheese, and shredded mozzarella cheese. Spoon a layer of the meat mixture onto the bottom of the crock pot. (I prefer to lightly butter bottom of crockpot & put down a single layer of noodles first). Add a double layer of the uncooked lasagna noodles. Break to fit noodles into crock pot. Top noodles with a portion of the cheese mixture. Repeat the layering of sauce, noodles, and cheese until all the ingredients are used. Cover and cook on low heat in crock pot for 6 to 8 hours.
